Ravioli with Pesto, Sausage, & Spinach

In the search for easy recipes, I sent an email out to the moms in our neighborhood asking for input. One of the tips was to keep pasta on hand, specifically frozen ravioli or similar.  She suggested making soup or tossing it with anything you have on hand to make a hardy meal.  

Another momma said that she loved store-bought pesto.  In addition to putting it in the obvious pasta dishes and sandwiches, she puts it in her mashed potatoes! I always made our pesto but buying it premade is a great time saver- herbs, nuts, oil, garlic, and cheese READY TO GO!

I trucked it over to Costco and tried to find items that could be used in multiple ways like these ladies suggested.  I won't insult you with a recipe for this but hopefully you can see another way to throw together dinner (no mixing bowls or cutting boards to clean).
Boil till they float.
I browned three mild Italian sausages with a bit of crushed red pepper, draining off most of the oil.
Baby spinach is great in pasta, soups, omelettes, or as a salad.
Toss in the flavor!
Add some cheese and enjoy. 
I added some marinara sauce to the boys' plates and they ate it right up.

  1. Kim, thank you, THIS is my style of cooking. Wow, does your youngest really eat the spinach? I have not had any luck with leafy greens. It's the only thing my little Farley seems to refuse. I am now motivated to keep trying :)

    1. D, I've got more simple and great recipes coming! Worrying about what to eat, eating out too much, and cleaning up what I did cook was really wearing on me. I almost feel like I'm getting my act together . . . ALMOST!

      Both boys are hit or miss with the greens. I can definitely sneak it in easier on the little one. They both LOVE broccoli! They only like it from frozen because I can overcook it a bit and it's nice and soft. A little butter, some Mrs. Dash (no salt) Herb and Garlic, and any kind of cheese. I may try that combo on some spinach!

      You may want to try making Lauren's Rocket Dip if Sammy likes to dip. Just sing, 'to the left, to the left . . . dip, baby, dip.'

  3. Kim, this recipe looks and sounds really good! I've had a jar of pesto in my pantry for a while but wasn't sure what else to cook with it besides pasta. Thanks for the help! :)
