My grandma was a wonderful cook. Whenever I would tell her that, she would say that she didn't have a lot of recipes, just a few she knew were good. This is one of those recipes. She called them 'Energy Bars' but they are basically Rice Krispies treats made with crunchy peanut butter, oatmeal, and raisins- all in the microwave! I hope you enjoy them as much as we do!
6 cups Rice Krispies Cereal
1 cup Oatmeal
1 cup raisins
1/4 cup butter
1/4 cup chinky peanut butter
10.5 oz bag of marshmallows
You will need two bowls, a 9x13 pan, saran wrap, and a spatula or wooden spoon.
Pull out the two pieces of Saran wrap and place them across the pan, enough to completely flod over.
Crisp the oatmeal and rice crispies in the microwave for 20 seconds, stir, then 20 seconds. I do it till I can smell it start to toast a bit, usually a total of 1 minute.
Combine the peanut butter and butter in a bowl. Microwave for 30 seconds (one minute is cold), stir, repeat until smooth.
Mix in marshmallows and microwave in 20-second intervals, stirring until smooth. Mix raisins into the dry ingredients and then mix all ingredients together, distributing the marshmallow throughout the dry ingredients.
Pour into the 9x13 pan and use a spatula to spread it out.
Fold the plastic wrap over and gently press till even. Let cool.
Uncover and cut. Store in air-tight container at room temperature. Yum!
